Here’s what he had to say about brunch:
“Shrimp is particularly in season starting in late February through the summer, so BBQ shrimp on toast is a great brunch item, or even just shrimp over some grits.
Eggs are a good source of protein, so egg frittata muffins or omelets are nice option. Watermelon sorbet and fruit salad are refreshing, and you can do a lot with parfaits.”

1. BBQ shrimp + scrambled eggs over toast
Since spring is prime shrimp season, this South Alabama-inspired tasty, tangy combo of fresh shrimp with scrambled eggs and toast is sure to please your brunch crowd.
Onion, peppers, mushrooms, coconut cream, Worcestershire sauce, Cajun seasoning and more pack a powerful flavor punch.
2. Protein-packed breakfast tacos
If you want a step up from your basic scrambled eggs that you know is going to taste great without a ton of effort, these breakfast tacos are your friend.
Bacon, sausage, eggs, pepper jack cheese and avocado provide the necessary protein and healthy fats to keep you and your guests satisfied long after the dishes have been put away.
3. Chilled “Mojito” fruit salad
A fruit salad is a colorful way to round out your brunch table, and this chilled “Mojito” fruit salad is no exception.
While the recipe calls for watermelon, colorful berries and mint, feel free to substitute in other fruits for a healthy sweet treat. Lime juice and a sugar substitute pull the whole thing together.
4. Creole shrimp + cauliflower grits
Who doesn’t love shrimp and grits? If you want to bump up your veggie intake for the day, try this fun recipe featuring cauliflower “grits.”
Parmesan, onions and peppers, Cajun seasoning and Worcestershire sauce, chicken stock, tomatoes and basil make this dish creamy and delectable.
3. Watermelon sherbet
Hands-down, my favorite part of this delightful watermelon sherbet recipe is the mini chocolate chips that serve as “seeds.”
Seriously, though, what’s not to love about a frozen blended swirl featuring watermelon, banana, heavy cream, lime juice and honey?
What a great way to finish off a healthy brunch.
